Natural aging stimulates the development of cheddar's distinctive taste, which is due mainly to the transformation of certain fats and proteins. From the moment it is put in the aging cellars, stored at controlled temperatures, until it has reached its allotted maturing time, cheddar will undergo frequent assessments to ensure it possesses the qualities of a future champion.
